The microgreens include kale, red cabbage, tatsoi, cress, daikon radish, arugula, yellow beets, & red chard.
Pea shoot are tender and have that delicious pea flavor. It is a green that finicky kids eat!
The watercress is pictured below. It has begun to bolt – so this may be the last harvest for a little while.

I can attest that the watercress is phenomenal. You can’t find local, no-spray watercress anywhere else and especially of this quality.
An old legend describes that when watercress is eaten at the day’s end it increases dreams that evening. This is probably due to the high concentration of minerals.
Watercress contains a complex array of minerals and trace minerals which help heal anemia, endocrine imbalances, osteoporosis, and a host of other mineral-deficient conditions. It has an affinity for the skin and is effective in helping to heal chronic cases of eczema, pimples, acne, etc. It contains 3 times as much vitamin E as lettuce and three times as much calcium as spinach. It’s highly alkaline and so neutralizes acidic waste products throughout the blood and lymphatic system.
I like to mix it in a salad with avocados and olive oil, which tends to calm the leaves’ spicy elements and makes it even more digestible.
